Rustic Egg Salad
- 4 slices Italian Bread, Each Slice Cut In Half
- 2 Tablespoons Butter, Room Temperature
- 4 whole Hard Boiled Eggs, Cut Lengthwise Into Fourths
- 6 whole Cherry Tomatoes, Halved
- 2 stalks Green Onions, Sliced Into Rounds, Light Green And White Parts Only
- 1/2 cups Soft Cheese, You Can Use Fresh Mozzarella, Feta Cheese, Or Goat Cheese
- Salt And Freshly Ground Pepper, To Taste
- Olive Oil
- Preheat oven to 450u0b0F.
- Coat one side of each bread slice with butter. Place the bread slices on a foil-lined baking sheet, butter side down. Toast for 5-6 minutes, or until the bread just begins to turn golden brown.
- Place sliced bread on a serving plate. Arrange sliced eggs, tomatoes, green onions and cheese on top of each slice.
- Season with salt and pepper. Drizzle with olive oil. Serve.
