Banana Bars
- 2/3 c. sugar
- 1/2 c. low-fat sour cream
- 2 Tbsp. margarine, softened
- 2 egg whites
- 3/4 c. mashed very ripe bananas (2 medium)
- 1 tsp. vanilla
- 1 c. flour (all-purpose)
- 1/4 tsp. salt
- 1/2 tsp. baking soda
- 2 Tbsp. finely chopped walnuts
- Heat oven to 375u0b0.
- Spray 9 x 9 x 2-inch pan with nonstick cooking spray.
- Beat sugar, sour cream, margarine and egg whites in large bowl on low speed for 1 minute, scraping bowl occasionally.
- Beat in bananas and vanilla on low speed for 30 seconds.
- Beat in flour, salt and baking soda on medium speed for 1 minute, scraping bowl occasionally.
- Stir in nuts.
- Spread in pan.
- Bake 20 to 25 minutes or until light brown; cool.
- Cut into 2 1/4 x 1 1/2-inch bars.
