Rustic Baked Peaches & Nectarines With Rosemary And Mascarpone
- 4 whole Peaches, Pitted
- 4 whole Nectarines, Pitted
- 1/2 cups Pecans
- 2 teaspoons Vanilla
- 5 Tablespoons Butter, Cut Into Pats
- 4 sprigs Rosemary (Plus Additional For Garnish If Desired.)
- 2 Tablespoons Honey (Plus Additional For Drizzling.)
- 12 ounces, weight Mascarpone Cheese
- Preheat oven to 350 F. Slice fruit into wedges and place in a single layer in a baking dish (a medium sized oval baker), then top with the vanilla, sliced butter and rosemary springs. Drizzle honey over entire dish.
- Bake uncovered for 15 minutes, then remove dish from oven and spoon the liquid in the dish over the fruit.
- Bake for 15 additional minutes then immediately serve, topping each serving with mascarpone, additional drizzled honey, pecans and rosemary garnish.
