S’More Pancake Popover Wannabes
- 1 Tablespoon Kashi Heart To Heart Honey Toasted Cereal
- 1/2 cups Greek Yogurt, Plain Or Vanilla Flavor
- 2 whole Egg Whites
- 1/2 teaspoons Vanilla Extract (omit If Using Vanilla Yogurt)
- 1/3 cups White Whole Wheat Flour
- 2 Tablespoons Unsweetened Cocoa Powder
- 1/2 teaspoons Baking Soda
- 1/2 teaspoons Stevia Or 1 Teaspoon Sugar
- 1/8 teaspoons Salt
- 2 Tablespoons Jet Puffed Mini Marshmallow Bites
- Preheat oven to 350u0b0F. Spray muffin pan with cooking spray.
- Place the Kashi cereal in a sandwich baggie and crush with a rolling pin until crumbs; set aside.
- In a blender, add Greek yogurt, egg whites, vanilla extract, flour, cocoa powder, baking soda, sugar and salt. Process until smooth.
- Pour pancake batter in the muffin pan and evenly sprinkle mini marshmallows over batter. Top with Kashi cereal.
- Cook for about 11-15 minutes until slightly puffed and set.
