Grapenut Pudding
- 3/4 cups GrapeNuts Cereal
- 2 Tablespoons Butter Or Margarine, Melted
- 3 whole Eggs, Well Beaten Or Egg Substitute To Equal 3 Eggs
- 1/2 cups Granulated Sugar
- 2 cups Milk (low Fat Milk Works Well In This Recipe)
- 1 teaspoon Vanilla Extract
- 1/4 teaspoons Ground Cinnamon
- 1/8 teaspoons Ground Nutmeg
- 1/8 teaspoons Salt
- 1/4 cups Raisins (can Use More If You Prefer), Optional
- Preheat the oven to 375 F. Spray a 1 1/2-quart baking dish with non-stick cooking spray. Set dish aside.
- In a deep small bowl, combine the cereal with the melted butter, stirring until the butter coats the cereal. Set aside.
- In a medium bowl, whisk together the eggs and sugar until well mixed. Whisk in the milk, vanilla, cinnamon, nutmeg and salt until thoroughly combined. Stir in the cereal and raisins.
- Pour the mixture into the prepared baking dish. Place the baking dish in a larger pan with hot water up to the 1" level of the baking dish.
- Carefully move the baking dishes into the oven. Bake at 375 F for 30 minutes. Then carefully remove the dishes from the oven. Stir the pudding thoroughly then return dishes to the oven and bake at 375 F for 15-20 minutes more, or until a knife inserted 1" from the center comes out clean.
- Serve the pudding warm or cold. Recipe makes 8 servings.
