Broccoli-Grape Salad
- 4 cups Coarsely Chopped Fresh Broccoli Florets
- 2 cups Halved Red Seedless Grapes
- 2 cups Halved Green Seedless Grapes
- 4 whole Green Onions, Thinly Sliced
- 6 strips Bacon, Cooked Crisp And Chopped
- 1/4 cups (rounded) Low Fat Or Regular Mayonnaise
- 1/4 cups (rounded) Low Fat Or Regular Plain Greek Yogurt
- 2 Tablespoons Granulated Sugar
- 1/2 Tablespoons Apple Cider Vinegar
- 1 cup Lightly Salted Peanuts
- For the salad, combine the chopped broccoli, red grapes, green grapes, green onions and chopped bacon in a large bowl. Stir to mix.
- For the dressing, in a medium bowl, combine the mayonnaise, Greek yogurt, sugar and cider vinegar. Whisk until combined and smooth.
- Pour the dressing over the broccoli mixture and stir to coat. Cover with a sheet of plastic wrap and refrigerate several hours or overnight.
- Just before serving, add the peanuts and toss to combine.
- Recipe makes 6-8 servings.
