Banana Bread Style Protein Bars
- 3 tablespoons, 1 teaspoon, 2-1/3 pinches Olive Oil
- 2-2/3 ounces, weight Brown Sugar
- 2 whole Eggs
- 1 Tablespoon Cinnamon
- 1 teaspoon Vanilla Extract
- 1 cup, 5 tablespoons, 1-7/8 teaspoons, 7/8 pinches Semi-skimmed Milk
- 1-7/8 ounces, weight Dried Banana Coins
- 2-1/2 ounces, weight Dates (halved Lengthwise)
- 1-7/8 ounces, weight Sultana/Dried Raisins
- 2-1/8 ounces, weight Walnuts (halved)
- 2-1/8 ounces, weight Sunflower Seed Hearts
- 1 pound, 5/8 ounces, weight Rolled Oats
- 4-5/8 ounces, weight Wholemeal Flour
- 1/2 pounds, 2 ounces, weight Whey Protein Powder
- Pre-heat oven to 180u0b0C/350u0b0F.
- In large mixing bowl, cream together olive oil (or softened butter), sugar, eggs, cinnamon and vanilla. Add milk, dried fruit, nuts and seeds and mix thoroughly.
- In second mixing bowl, combine oats, flour and whey powder and mix thoroughly.
- Gradually add the dry ingredients to the wet ingredients in the larger mixing bowl, ensuring that the mixture is fully combined and moistened.
- Press the mixture into a greased 11"x11" baking dish and cook in the center of pre-heated oven for 15 minutes or until slightly golden brown across the top.
