Chilled Strawberry Pie
- 3 large egg whites
- 1 c. sugar
- 1 tsp. vanilla
- 1 c. round buttery cracker crumbs
- whole berries (for garnish)
- 1 c. chopped pecans
- 1 c. whipping cream
- 2 Tbsp. powdered sugar
- 2 c. strawberries, sliced
- Beat egg whites at room temperature until soft peaks form. Gradually add sugar and vanilla, beating until stiff peaks form. Fold in cracker crumbs and pecans.
- Spread mixture into buttered 10-inch pie plate, spreading sides slightly higher.
- Bake at 350u0b0 for 30 minutes or until lightly browned.
- Cool shell completely. Beat cream until foamy.
- Gradually add powdered sugar, beating until soft peaks form.
- Fold in berries.
- Spread mixture evenly into pie shell.
- Chill about 3 hours before serving.
- Makes 1 pie. Similar to Strawberry Fluff at Cheese Barn.
