Cafe International'S Chicken Sicilian
- 8 oz. boneless, skinless chicken breasts, cut into strips
- 1/4 to 1/2 tsp. fresh minced garlic
- pinch to 1/4 tsp. dried basil
- pinch to 1/4 tsp. dried oregano
- 4 mild cherry peppers, tops removed and halved
- 3 large fresh mushrooms, sliced
- 1 small peeled, boiled potato, cut in pieces
- 1 Tbsp. sliced green olives
- 1 Tbsp. sliced black olives
- 2 slices fresh tomato, diced
- salt and pepper to taste
- Dredge chicken strips in flour.
- Fry in deep fryer.
- Drain. Saute the garlic in heated olive oil until it softens.
- Add chicken, mushrooms, peppers, potato and seasonings.
- Heat until warm.
- Add brine from the cherry peppers jar, about 2 teaspoons. Add tomatoes and olives.
- Heat until warm.
- Serves 1.
