Potato Ham And Cheddar Fritatta
- 2 cups Frozen Seasoned Tater Tots
- 1/2 teaspoons Canola Oil
- 6 whole Eggs
- 1/4 teaspoons Salt
- 1/8 teaspoons Pepper
- 1/8 teaspoons Oregano
- 1/4 cups Half-and-half
- 1 teaspoon Baking Powder
- 1 cup Grated Cheddar Cheese
- 1 cup Diced Ham
- Preheat oven to 350u0b0F.
- Heat tater tots in microwavable bowl about 2 minutes until defrosted. Mash the tots with a fork or potato masher until broken apart.
- Heat canola oil over medium heat in an ovenproof 8-inch skillet. Add the tots and cook for about 2 minutes. Remove from heat and set aside.
- In a stand mixer add eggs, salt, pepper, oregano, half-and-half and baking powder. Mix on high power until eggs are thick and fluffy, about 1 minute. Add the cheddar cheese and ham mix well and pour into skillet over potatoes.
- Bake at 350u0b0F for 20-30 minutes until middle is set. Serve immediately.
