Potato Ham And Cheddar Fritatta

  1. Preheat oven to 350u0b0F.
  2. Heat tater tots in microwavable bowl about 2 minutes until defrosted. Mash the tots with a fork or potato masher until broken apart.
  3. Heat canola oil over medium heat in an ovenproof 8-inch skillet. Add the tots and cook for about 2 minutes. Remove from heat and set aside.
  4. In a stand mixer add eggs, salt, pepper, oregano, half-and-half and baking powder. Mix on high power until eggs are thick and fluffy, about 1 minute. Add the cheddar cheese and ham mix well and pour into skillet over potatoes.
  5. Bake at 350u0b0F for 20-30 minutes until middle is set. Serve immediately.
