Blueberry Limeade

  1. For the simple syrup with blueberries:
  2. Zest the lime and set aside for a moment. Heat a saucepan on low to medium heat and add the water, sugar, lime zest and blueberries. Bring the sugar mixture to a boil and stir. Turn the heat down just a bit and continue stirring until the sugar dissolves (about 6 minutes in total). Then pour the mixture into a blender and blend until the blueberries are liquefied. Let it cool.
  3. For the blueberry limeade:
  4. Juice and strain the limes. In a large pitcher, add the strained lime juice, all of the cooled simple syrup and the water. Stir together.
  5. When ready to serve, add the ice into the pitcher. Add additional ice and remaining whole blueberries (for garnish) intermittently into the serving glasses. Slice a lime into about 1/2 inch wide slices, remove the seeds if possible and then quarter each slice for garnish. Add a few quarters into the serving glasses for garnish. Pour the blueberry limeade into each serving glass and top with more whole blueberries.
