Watermelon Berry Pineapple Whip

  1. For the pineapple frozen yogurt:
  2. Add pineapple chucks into a food processor and grind until smooth. Pour pineapple puree into a bowl, along with the Greek yogurt and sugar and whisk together until combined. Add mixture into an ice cream machine and churn according to manufacturer's instructions.
  3. For the macerated strawberries:
  4. Add sliced strawberries to a bowl and sprinkle granulated sugar on top. Let it sit for about 20 minutes until juices are released.
  5. For the watermelon soda:
  6. While pineapple frozen yogurt churns, add watermelon into a food processor and grind until smooth. Pour melon puree into a bowl through a sieve to remove seeds and solids. You should have about 1 full cup of watermelon juice left. Next, stir in the lime juice and sugar. For each soda, add 1/2 cup of watermelon juice to 1/2 cup of seltzer.
  7. To assemble the floats:
  8. Add scoops of frozen yogurt into glasses. Spoon sliced strawberries over the yogurt then pour watermelon soda over the scoops and serve.
