Linguini And Clam Sauce
- 1/4 c. olive oil
- 1 medium onion, chopped
- 2 garlic cloves, minced
- 4 tsp. flour
- 3 (8 oz.) cans minced clams, drain and reserve juice
- 1 bottle clam juice
- 1/4 c. white wine
- 1/2 tsp. oregano
- 1/8 tsp. red pepper flakes
- 1/2 tsp. basil
- 1/8 tsp. salt
- 3 Tbsp. chopped parsley
- 1 lb. linguini
- grated cheese
- In medium saucepan, heat oil.
- Add onion and garlic and saute for 2 minutes.
- Stir in flour.
- Add both clam juices, wine, oregano, red pepper flakes, basil and salt.
- Bring to a boil and simmer for 10 minutes.
- Add clams and parsley.
- Return to a boil and remove from heat.
- Cook pasta.
- Pour clam sauce over linguini mix.
- Can sprinkle grated cheese on top.
