Chow Chow

  1. Combine cucumbers, green pepper, cabbage, onion and tomatoes in a large nonmetal container.
  2. Dissolve salt in 2 quarts water; pour over vegetables.
  3. Cover; let stand 8 to 10 hours.
  4. Drain well.
  5. Cook lima beans, green beans and carrots in 2 cups water for 20 minutes, or until crisp-tender; drain.
  6. Combine all vegetables and remaining ingredients in a Dutch oven; boil 10 minutes.
