Chow Chow
- 2 c. thinly sliced cucumbers
- 2 c. chopped green pepper
- 2 c. chopped cabbage
- 2 c. sliced onion
- 2 c. chopped green tomatoes
- 1 1/2 c. salt
- 2 qt. water
- 2 c. fresh baby lima beans
- 2 c. cut fresh green beans
- 2 c. sliced carrots
- 2 c. water
- 1 qt. white vinegar (5% acidity)
- 4 c. sugar
- 2 c. water
- 1/4 c. mustard seed
- 2 Tbsp. celery seed
- 1 Tbsp. plus 1 tsp. ground turmeric
- Combine cucumbers, green pepper, cabbage, onion and tomatoes in a large nonmetal container.
- Dissolve salt in 2 quarts water; pour over vegetables.
- Cover; let stand 8 to 10 hours.
- Drain well.
- Cook lima beans, green beans and carrots in 2 cups water for 20 minutes, or until crisp-tender; drain.
- Combine all vegetables and remaining ingredients in a Dutch oven; boil 10 minutes.
