Peanut Butter Chocolate Chip Granola Cookies
- 1/2 cups Applesauce (unsweetened)
- 1/4 cups Peanut Butter
- 2 Tablespoons Maple Syrup
- 1 teaspoon Stevia
- 1/2 teaspoons Vanilla Extract
- 1/2 teaspoons Salt
- 2 Tablespoons Almond Flour
- 1 cup Old Fashion Oats (I Used Trader Joe's Gluten Free)
- 2 Tablespoons Honey Roasted Peanuts, Chopped Small
- 1/4 cups Mini Chocolate Chips (use Sunspire For Vegan)
- Preheat oven to 350u0b0F. Line a baking sheet with parchment paper.
- In a medium bowl add applesauce, peanut butter, maple syrup, stevia, vanilla extract and salt; mix well. Stir in almond flour, oats, peanuts and chocolate chips and mix until everything is incorporated.
- The batter will be wet. Using a cookie scoop, scoop heaping 2 tablespoon size scoops of batter onto prepared cookie sheet. Since the cookies won't rise or spread you can place them close together, about an inch apart.
- Bake for 10-13 minutes until the cookies are slightly golden. Remove pan from oven and set on a rack. Let them slightly harden on cookie sheet then place on a cookie rack to cool.
