Peanut Butter Chocolate Chip Granola Cookies

  1. Preheat oven to 350u0b0F. Line a baking sheet with parchment paper.
  2. In a medium bowl add applesauce, peanut butter, maple syrup, stevia, vanilla extract and salt; mix well. Stir in almond flour, oats, peanuts and chocolate chips and mix until everything is incorporated.
  3. The batter will be wet. Using a cookie scoop, scoop heaping 2 tablespoon size scoops of batter onto prepared cookie sheet. Since the cookies won't rise or spread you can place them close together, about an inch apart.
  4. Bake for 10-13 minutes until the cookies are slightly golden. Remove pan from oven and set on a rack. Let them slightly harden on cookie sheet then place on a cookie rack to cool.
