Egg, Bacon And Cheese Tortilla Pizza

  1. Cook bacon strips in a skillet over medium heat. Once bacon is crisp to your liking, remove bacon from the skillet to a paper towel. Once cooled, crumble it and set aside.
  2. Whisk eggs in a small bowl then cook in a skillet over medium heat until they are cooked to your desired consistency. Remove them from the skillet and set aside.
  3. In a separate skillet place 1 or 2 tortillas (depending on how big your pan is) over medium heat. Turn once the side down in the skillet is beginning to brown and become crispy. Once flipped, place some scrambled eggs and some crumbled bacon across the tortilla and top with cheese. While the tortilla is achieving the desired golden brown on the side down, the cheese will melt. When done, remove from skillet. Repeat this process until you have divided the eggs, bacon and cheese evenly among all 4 tortillas and cooked to perfection! Serve immediately.
