Decadent Grits With Bacon And Bleu Cheese
- 1-1/2 cup Heavy Whipping Cream
- 2-1/2 cups Water
- 1 teaspoon Salt
- 2 Tablespoons Butter
- 1 cup Stoneground Grits (not Instant!)
- 1/2 cups Crumbled Bleu Cheese
- 3 slices Cooked, Crumbled Bacon Or Equivalent Bacon Pieces
- Fresh Ground Black Pepper, To Taste (optional)
- Combine first 5 ingredients into a large saucepan. Bring to a boil over a medium heat. Reduce heat to low, cover and simmer for 45 minutes, stirring occasionally. If grits become too thick, just add a bit more water.
- After the 45 minutes, remove from heat, place in 4 small dishes and top equally with bacon crumbles and bleu cheese crumbles. Fresh ground black pepper is optional, but quite delicious.
- A lower fat version can be made with a total of 4 cups of water, and omitting the heavy whippng cream. Why you would want to do that, I have no idea, but there you have it.
- I prefer the Carolina Plantation Stoneground Grits, and they have a website www.carolinaplantationrice.com if you can't get them locally.
