Coconut Lime Loaf
- 1-1/2 cup All-purpose Flour
- 1/4 cups Sweetened Shredded Coconut, Toasted Or Not
- 1 teaspoon Baking Powder
- 1 pinch Salt
- 1/2 cups Unsalted Butter
- 1 cup Sugar, Divided
- 2 whole Eggs, Beaten
- 2 whole Limes, Zest And Juice
- 1/2 cups Coconut Milk
- Preheat oven to 350F.
- In small bowl, combine flour, shredded coconut, baking powder and salt.
- In large bowl, cream butter and 3/4 cup sugar on medium until pale and fluffy.
- Add beaten eggs and lime zest, and beat until combined.
- Add flour mix and coconut milk, alternating on low, until all is incorporated. Scrape down the bowl with each addition.
- Add one tablespoon of lime juice to the mixed batter and beat to incorporate.
- Pour into greased loaf pan and bake for 45 minutes, or until a cake tester inserted into the cake comes out clean.
- Cool, then turn out onto a serving plate. Mix lime juice and remaining 1/4 cup sugar, and pour over cake to form glaze.
- Try to stop yourself from eating the whole thing in one sitting. By yourself.
