Lescó
- 3 Tablespoons Bacon Fat
- 1-1/2 cup Onions, Chopped
- 1/2 teaspoons Garlic, Finely Chopped
- 1/2 teaspoons Sweet Paprika
- 1 pound Green Peppers, Seeded And Chopped
- 28 ounces, weight Whole Tomatoes (canned), Drained, Save Liquid Or 1 Pound Fresh Tomatoes, Peeled, Seeded And Chopped
- 1/2 teaspoons Salt
- 1/2 teaspoons Pepper
- 1/2 cups Tomato Sauce (if Using Fresh Tomatoes)
- 1 pound Kielbasa Sausage (if You Can Find Hungarian Sausage, Use It Instead!)
- 6 whole Eggs
- Heat bacon fat in a 2-qt saucepan over medium-high heat. Add onions and garlic, and cook for 8-10 minutes or until onions begin to caramelize.
- Remove from heat, add paprika and stir until onions are well-coated. Stir in peppers, tomatoes, salt and pepper. Cover and cook over medium heat until tomatoes release liquid. Add drained liquid or sauce as needed.
- Add sausage; cover and simmer for another 1/2 hour. It should have the consistency of tomato sauce. Adjust with sauce as necessary. Add additional salt and pepper to taste.
- Serve in deep bowls topped with a fried egg. Break the yolk and stir in to develop an amazing creaminess.
