Classic New York Cheesecake
- 1 c. graham cracker crumbs
- 3 Tbsp. sugar
- 3 Tbsp. melted margarine
- 5 pkg. (8 oz. each) cream cheese (softened)
- 1 c. sugar
- 3 Tbsp. flour
- 1 Tbsp. vanilla
- 1 c. sour cream
- 4 eggs
- Mix crumbs, 3 Tbsp. sugar and margarine. Press onto bottom of 9 inch springform pan. Bake at 325 degrees for 10 minutes. Mix cream cheese, 1 cup sugar and vanilla with electric mixer until well blended. Add sour cream; mix well. Add eggs one at a time mixing on low speed after each addition just until blended. Pour over crust. Bake at 325 degrees for 1 hour and 5 minutes or until center is almost set if using silver springform pan. If using dark metallic springform pan, bake at 300 degrees for 1 hour and 5 minutes. Loosen cake from side of pan. Cool before removing rim of pan. Refrigerate 4 hours or over night.
