Herb Hot And Sour Soup
- 1/2 lb. boneless chicken or pork
- 3 Tbsp. soy sauce
- 6 c. homemade chicken broth
- 1 c. shredded cabbage
- 1/2 c. finely chopped carrots
- 3 Tbsp. red wine vinegar or white vinegar
- 1 Tbsp. cornstarch
- 2 Tbsp. thinly sliced chives or green onions
- 4 oz. mushrooms
- 1/2 tsp. pepper
- 1/4 c. sugar
- 1/2 tsp. basil
- 1 Tbsp. cold water
- Partially freeze chicken or pork.
- Cut meat into 1 x 1/4-inch strips.
- Sprinkle meat with 1 tablespoon of the soy sauce.
- In large saucepan, bring chicken broth to boiling; stir in meat, the remaining soy sauce, vinegar, pepper, sugar, mushrooms, cabbage and carrots.
- Simmer, covered, 20 minutes.
- Add basil; simmer 3 minutes.
