Healthy Huervos Rancheros Scramble
- 1 whole Small Round Corn Tortilla
- 2 Tablespoons Finely Chopped Red Onion
- 1/2 cups Egg Whites
- 2 Tablespoons Your Favorite Salsa
- Salt And Pepper, to taste
- Cut the corn tortilla in half. Soften the half of the tortilla in the pan on high heat, turning a few times to soften both sides. Remove the tortilla from the heat and place on your plate. Reduce the heat to medium high. Spray the pan with the cooking spray and add the red onions and the other half of the tortilla that has been cut into small bite-sized squares. Once the onions and tortilla have softened (about 3 minutes or so), add the egg whites. Season with salt and pepper. When cooked through, place eggs on the plate on top of the tortilla half. Top with salsa. Serves 1 delicious and nutritious breakfast.
