Chocolate Peanut Butter Meringue Pie

  1. In a large saucepan, combine sugar, flour, salt and milk. Cook and stir over medium heat until thickened, 5-7 minutes. Remove from heat and gradually add egg yolks stirring constantly to prevent eggs from cooking. Return to heat and cook until thickened 1-2 minutes. Remove from heat and add chocolate chips, peanut butter, butter and vanilla extract. Stir until thoroughly combined and chips have melted. Pour pudding into pie crust.
  2. Preheat oven to 325 F.
  3. To prepare meringue, combine egg whites, vanilla and cream of tartar in a large mixing bowl. Mix on medium high speed until whites turn frothy. Add sugar, one tablespoon at a time, mixing well between each. Continue beating until stiff glossy peaks form, 4-6 minutes. Add meringue to the top of the pie, all the way to the sides of the dish. Sprinkle with toffee bits.
  4. Bake in preheated 325 F oven for 8-10 minutes or until lightly browned. Remove from oven and set pan on a rack to allow pie to cool.
  5. Serves 8.
