Weight Watcher'S Vegetable Noodle Soup
- 3 (10 1/2 oz.) cans no-salt added chicken broth (undiluted)
- 2 c. water
- 2 large carrots, scraped and cut into 1-inch julienne strips
- 1 large sweet red pepper, seeded and cut into 1-inch julienne strips
- 1 medium leek, sliced
- 2 oz. uncooked vermicelli pasta, broken in half
- 1/2 tsp. salt
- 1/8 to 1/4 tsp. ground white pepper
- 1 Tbsp. chopped fresh parsley or 2 tsp. dried parsley flakes
- The ingredients for soup are as follows, keeping in mind that you must follow Jesus' instructions on how to measure as recorded by Luke 6:38:
- "Give to others, and God will give to you.
- Indeed, you will receive a full measure, a generous helping, poured into your hands, all you can hold.
- The measure you use for others is the one that God will use for you."
