Orange Almond Cake
- 1 teaspoon Olive Oil
- 3 cups Blanched Almond Flour
- 1/2 teaspoons Sea Salt
- 1 teaspoon Baking Powder
- 1 whole Navel Orange
- 3 whole Room Temperature Eggs
- 1/3 cups Coconut Oil
- 1/2 cups Raw Honey
- 1/2 teaspoons Vanilla Extract
- 2 Tablespoons Powdered Sugar, For Dusting
- 1. Preheat oven to 355u0b0F and grease a 7" tart pan with olive oil.
- 2. In a medium bowl, add almond flour, sea salt, and baking powder. Use a fork to mix.
- 3. Remove seeds from oranges (leave peel intact) and place in high speed blender on high for 20-30 seconds until pureed. Set aside.
- 4. Whisk eggs, coconut oil, and honey in another medium bowl.
- 5. Add wet mixture to the dry mixture and mix until smooth.
- 6. Stir in orange puree and vanilla.
- 7. Transfer batter into the tart pan. Bake for 25-30 minutes until golden.
- 8. Dust with powdered sugar. Enjoy!
