Garden Rice
- 2 tbsp. butter or marg.
- 1 small onion, diced
- 1 garlic clove, minced
- 1 chicken bouillon cube
- 1 c. white rice
- 2 c. water
- 1/2 tsp. salt, twice
- 1/8 tsp. ground pepper
- 3 tbsp. olive oil
- 1/2 small bunch broccoli, 2x1 inch
- 2 large carrots, thinly sliced
- 2 med. yellow squash, matchstick strips
- 1 c. Half & Half
- 1 tbsp. flour
- 2 c. shredded Monterey Jack
- 2 med. tomatoes, diced
- In 3 qt. pan melt butter over med. heat.
- Saute onion and garlic until tender.
- Stir in water, bouillon cube, salt and pepper.
- Heat to boiling.
- Stir in rice.
- Reduce heat, cover and simmer 20 minutes, until tender and all liquid is absorbed.
