Savory Streusel Topped Green Beans
- 1/2 pounds Fresh Green Beans
- 1 cup Water (for Steaming Green Beans)
- 1/2 Tablespoons Unsalted Butter, Softened
- 1/2 cups Old Fashioned Oats (not Quick Cooking)
- 1 Tablespoon Olive Oil
- 1 clove Garlic, Peeled And Chopped (about 1 Tsp.)
- 1 pinch Kosher Salt
- 1 pinch Black Pepper
- 1/2 cups Parmesan Cheese, Finely Grated
- For Streusel:
- 1.teat oven to 350 degrees F.
- 2.tpread oats in a single layer on a rimmed baking sheet, and toast them in the oven, stirring occasionally, until oats are very lightly golden brown. (about 10-12 minutes). Set aside while you prepare the green beans.
- For Green Beans:
- 1.tinse the green beans and trim the ends off.
- 2.tlace beans in a steamer basket in a saucepan with 1 inch of water in the bottom.
- 3.tteam the green beans over high heat, until done to your liking. I steam mine for 5-7 minutes for crisp-tender. Set beans in a shallow serving dish, toss with 1/2 Tablespoon of butter, and tent with aluminum foil to keep warm.
- To Finish Streusel:
- 1.teat olive oil until hot, in an 8 inch skillet over medium heat.
- 2.tdd garlic to hot oil and cook until golden brown, about 30 seconds.
- 3.tdd the toasted oats, and a hefty pinch of salt and pepper, stirring to coat the oats. Cook for 1 minute.
- 4.tdd the parmesan and continue cooking until the topping begins to clump; stirring constantly. (About 1 minute.)
- 5.temove from heat, and sprinkle streusel over the steamed green beans. Serve hot.
