Orange Roughy In Citrus Sauce
- 1 lb. orange roughy
- 1/4 c. frozen orange juice concentrate
- 2 Tbsp. lemon juice
- 1 tsp. dried dill weed
- 1 tsp. paprika
- 1/2 c. water
- 6 Tbsp. fruit juice sweetened orange marmalade
- 1 tsp. arrowroot
- Put fish in glass bowl.
- Combine remaining ingredients except marmalade and arrowroot and mix to dissolve orange juice concentrate.
- Reserve 1/2 cup for sauce; pour remaining mixture over fish.
- Cover and marinate 45 minutes or longer, turning at least once in refrigerator.
- Preheat oven.
- Remove fish; place on broiler pan.
- Add 3 tablespoons of marmalade to marinade; heat. Broil fish 10 to 15 minutes, until fish flakes, basting several times during cooking.
- Heat reserved orange sauce in small saucepan with arrowroot and marmalade until thick.
- Pour sauce over fish. Serve.
