Scrumptious Banana Bread

  1. Preheat oven to 300u0b0F. Grease and line the base and sides of a 3" x 4" x 11" loaf pan.
  2. Sift all dry ingredients into a bowl.
  3. In a separate bowl and using an electric mixer, mix eggs and sugar on high speed until thick and pale. Reduce speed to medium, and drizzle in oil in a slow, steady stream. Add bananas, yoghurt and vanilla and beat until well combined. Add flour mixture and fold through using a large wooden spoon.
  4. Pour batter into prepared pan and scatter the walnuts on top.
  5. Bake for about 1 hour, or until a skewer inserted into the centre of the bread comes out clean.
  6. Cool bread in pan for 10 minutes before turning out onto a wire rack to cool.
  7. Serve in thick slices, either warm or at room temperature.
  8. Notes:
  9. 1. The total amount of mashed banana should be about 1 1/2 cups.
  10. 2. If you like, you can double the amount of toasted walnuts and fold half through the batter and sprinkle the other half on top.
