Sausage Breakfast Casserole

  1. Heat oven to 400 F. Grease a rectangular baking dish (11 x 7 inch).
  2. Cook sausage, peppers and onion in a large skillet over medium heat until sausage is no longer pink. Remove from heat and drain.
  3. In a large bowl mix together the sausage, hash brown potatoes and 1/2 of the cheese then put it into the casserole dish. The potatoes do not need to be thawed, just break them up a bit with a fork before mixing.
  4. In a medium sized bowl mix together the Bisquick, milk, pepper and eggs. Pour over the sausage and potato mixture.
  5. Bake uncovered for approximately 30 minutes. Remove dish from oven and top with the remaining 1/2 of the cheese. Bake for 2 minutes longer.
  6. Remove dish from oven and set it on a rack. Cool for 5 minutes before serving.
  7. Makes 6 servings.
  8. Note:
  9. - If you double the recipe and use a 9x13 dish, you will have to adjust your baking time to approximately 40 minutes.
