Sausage Breakfast Casserole
- 1 package Pork Sausage (12 Ounce Package)
- 1/2 cups Bell Pepper, Chopped
- 1/4 cups Onion, Chopped
- 1-1/3 cup Frozen Hash Browns
- 1 cup Cheddar Cheese, Shredded
- 1/2 cups Bisquick Mix
- 2 cups Milk
- 1/4 teaspoons Black Pepper
- 2 whole Eggs
- Heat oven to 400 F. Grease a rectangular baking dish (11 x 7 inch).
- Cook sausage, peppers and onion in a large skillet over medium heat until sausage is no longer pink. Remove from heat and drain.
- In a large bowl mix together the sausage, hash brown potatoes and 1/2 of the cheese then put it into the casserole dish. The potatoes do not need to be thawed, just break them up a bit with a fork before mixing.
- In a medium sized bowl mix together the Bisquick, milk, pepper and eggs. Pour over the sausage and potato mixture.
- Bake uncovered for approximately 30 minutes. Remove dish from oven and top with the remaining 1/2 of the cheese. Bake for 2 minutes longer.
- Remove dish from oven and set it on a rack. Cool for 5 minutes before serving.
- Makes 6 servings.
- Note:
- - If you double the recipe and use a 9x13 dish, you will have to adjust your baking time to approximately 40 minutes.
