Oat Bran Fruit Muffins
- 1 c. uncooked oat bran cereal (fine grain)
- 1/4 c. sugar
- 1/2 tsp. soda
- 1/2 tsp. cinnamon
- 1 c. skim milk
- 1 tsp. grated orange peel
- 1 1/2 c. unsifted all-purpose flour
- 3 tsp. baking powder
- 1/2 tsp. salt
- 1 egg (can use 1/4 c. Egg Beaters)
- 1/4 c. salad oil
- 1 small apple, peeled and diced
- In large mixing bowl combine oat bran, flour, sugar, baking powder, baking soda, salt and cinnamon.
- Mix thoroughly; set aside. In small bowl, lightly beat egg with a fork; stir in milk, salad oil and grated orange peel.
- Pour all at once into flour mixture; stir just until dry ingredients are moistened.
- Fold in apple. Fill 15 greased (with Pam) medium size muffin cups 1/2 full.
- Bake in preheated 400u0b0 oven until done, about 20 minutes.
- Yields 15 muffins, 110 calories each.
