Oat Bran Fruit Muffins

  1. In large mixing bowl combine oat bran, flour, sugar, baking powder, baking soda, salt and cinnamon.
  2. Mix thoroughly; set aside. In small bowl, lightly beat egg with a fork; stir in milk, salad oil and grated orange peel.
  3. Pour all at once into flour mixture; stir just until dry ingredients are moistened.
  4. Fold in apple. Fill 15 greased (with Pam) medium size muffin cups 1/2 full.
  5. Bake in preheated 400u0b0 oven until done, about 20 minutes.
  6. Yields 15 muffins, 110 calories each.
