Pepperjack Biscuits
- 2 cups All-purpose Flour, Plus More As Needed
- 1 teaspoon Kosher Salt
- 2 teaspoons Baking Powder
- 5 Tablespoons Butter
- 7/8 cups Half-and-half
- 1 cup Pepperjack Cheese
- Preheat the oven to 450 degrees. Mix the dry ingredients together in the food processor. Cut the butter into 1/2 inch pieces without touching it too much (you want it to be really cold). Process butter into dry mixture until it is well incorporated. It should look like there are small pea-sized chunks of butter in the dough. Add half-and-half and cheese and stir by hand just until the mixture comes together. Turn out onto a floured surface and knead it exactly 10 times! Using your hands, press the dough out into a 3/4 inch thick rectangle. Using a biscuit cutter or the mouth of a 2 inch diameter glass, cut rounds. Continue to mush dough back together and cut rounds until all the dough is gone. Place on an ungreased baking sheet. Bake for 7-9 minutes.
