Coconut Sandwich Cookies With Malibu Rum Filling

  1. Preheat oven to 350F. Mix cake mix, water, egg, and melted butter together in a large bowl until well blended. Drop by teaspoonfuls onto an ungreased cookie sheet. Bake for 10-12 minutes, or until cookies just barely start to brown around the edges. Let cookies cool for 2 minutes on cookie sheet before transferring to a cooling rack.
  2. To make the frosting: using an electric mixer, slowly add the sugar to the room temperture butter until completely mixed. Blend in milk and rum.
  3. Once the cookies are cool, sandwich two cookies together with a layer of thin (or thick!) icing.
