Coconut Sandwich Cookies With Malibu Rum Filling
- FOR THE COOKIES:
- 1 box (18.25 Oz. Box) Coconut Cake Mix
- 1/3 cups Water
- 1 whole Egg
- 1/4 cups Butter, Melted

- FOR THE FROSTING:
- 2 cups Powdered Sugar
- 1/4 cups Butter, At Room Temperture
- 1 teaspoon Milk
- 1 Tablespoon Malibu Rum
- Preheat oven to 350F. Mix cake mix, water, egg, and melted butter together in a large bowl until well blended. Drop by teaspoonfuls onto an ungreased cookie sheet. Bake for 10-12 minutes, or until cookies just barely start to brown around the edges. Let cookies cool for 2 minutes on cookie sheet before transferring to a cooling rack.
- To make the frosting: using an electric mixer, slowly add the sugar to the room temperture butter until completely mixed. Blend in milk and rum.
- Once the cookies are cool, sandwich two cookies together with a layer of thin (or thick!) icing.
