Applesauce Fruitcake
- 2 1/3 c. drained applesauce
- 1 c. shortening
- 4 eggs, well beaten
- 1 c. whole wheat flour
- 4 tsp. baking soda
- 1 c. nuts, broken
- 3 tsp. cinnamon
- 1 tsp. mace
- 6 Tbsp. lemon juice
- 1 tsp. allspice
- 1 tsp. cloves
- 2 tsp. nutmeg
- 2/3 c. molasses
- 2 c. brown sugar
- 4 c. white flour
- 1 3/4 tsp. salt
- 2 lb. raisins
- 1/4 lb. citron, thinly sliced
- Cream sugar and shortening.
- Add applesauce, molasses, eggs and lemon juice.
- Sift flour with baking soda, salt and spices. Dredge raisins in flour.
- Add flour slowly to batter.
- Beat.
- Add raisins, citron and nuts.
- Gumdrops optional.
- Bake at 300u0b0 to 325u0b0 for 2 hours.
