Marvin’S Favorite Coconut Cream Pie
- 3/4 cups Sugar
- 1/2 teaspoons Salt
- 2-1/2 Tablespoons Cornstarch
- 1 Tablespoon All-purpose Flour
- 3 cups Milk
- 3 whole Egg Yolks, Slightly Beaten
- 1 Tablespoon Butter
- 1-1/2 teaspoon Vanilla
- 3/4 cups Shredded Or Flake Coconut
- 1 whole Baked 9" Pie Shell
- In a saucepan mix the sugar, salt, cornstarch, and flour, then add milk. Cook over moderate heat, stirring constantly, until mixture thickens and boils. Boil 1 minute. Remove from heat. Blend in part of the mixture with the egg yolks (to temper them) and then add the egg mixture into the hot mixture in the saucepan. Boil 1 minute more, stirring constantly. Remove from heat. Add the butter and vanilla. Cool, stirring occasionally. Fold in the coconut, and pour into the baked pie shell. May be topped with meringue, or whipped cream. Chill thoroughly, about 2 hours.
