Frosted Eggnog Cookies (Made With Cake Mix!)

  1. Preheat the oven to 350 F.
  2. In a small bowl, stir together all of the cookie ingredients with a wooden spoon. Do not over-mix.
  3. Divide the cookie dough into eight balls, and space them evenly on a parchment paper- or Silpat-lined baking sheet.
  4. Bake for 9 minutes. Remove pan from oven and set on a rack. Let cookies cool for 2 minutes, then move them to a cooling rack to cool completely.
  5. Before serving, make the frosting by beating together the powdered sugar and eggnog in a small bowl. If the frosting is dry, add additional eggnog to get it going. Frost the cookies and decorate with extra nutmeg.
