Santa Fe Nectarine Salad
- FOR THE DRESSING:
- 1/2 cups Peach Preserves
- 1/4 cups Freshly Squeezed Lime Juice
- 2 Tablespoons Vegetable Oil
- 1/4 teaspoons Ground Ginger
- 1/4 teaspoons Salt
- 1/8 teaspoons Freshly Ground Black Pepper

- FOR THE SALAD:
- 2 cups Purchased Finely Shredded Coleslaw Blend (from A 16 Oz. Package)
- 2 cups Mixed Romaine And Leaf Lettuce
- 2 whole Nectarines Or Peaches, Pitted And Thinly Sliced
- 1 cup Seedless Red Grapes
- 1 whole Jalapeno (or 2), Seeded And Chopped
- 2 Tablespoons Chopped Fresh Cilantro
- In a small bowl, combine all of the dressing ingredients; mix well.
- In a large bowl, combine all of the salad ingredients.
- Just before serving, add dressing; toss gently to mix. (Rather than tossing the salad, I like to serve the dressing on the side.)
- Makes 6 (1-cup) servings.
