Sugar-Free Fruit Cake
- 1 c. flour
- 1/2 c. quick oats
- 1 1/2 tsp. baking powder
- 1 tsp. cinnamon
- 1/4 tsp. allspice
- 1/4 tsp. nutmeg
- 1/2 tsp. cloves
- 1/2 c. Nutri-Grain cereal, crushed
- 2 large eggs
- 3/4 c. honey
- 1/2 c. margarine
- 1 1/2 tsp. vanilla
- 1 c. cubed apples
- 3/4 c. raisins, coated with flour
- 1/2 c. sugar-free jelly or preserves
- 1/2 c. walnuts, crushed
- 1 c. pecans, crushed
- 3/4 c. chopped cranberries, sweetened with artificial sweetener
- Mix the first 8 ingredients.
- Mix remainder and add to first bowl.
- Line bottom of baking dish with pecans.
- (Also put some on top.)
- Bake in 2 greased 1 1/2-quart loaf pans for 35 to 45 minutes at 350u0b0.
- Best if sealed and refrigerated for 2 days.
