Sesame Zucchini Noodles
- 1/2 cups Almond Butter
- 2 Tablespoons Water
- 1 Tablespoon Soy Sauce
- 1 Tablespoon Olive Oil
- 1 Tablespoon Lime Juice
- 2 teaspoons Agave Syrup
- 1/2 teaspoons Fresh Ginger, Grated
- 1 Tablespoon Sesame Oil
- 1/2 teaspoons Salt
- 4 cups Zucchini, Spiralized Or Julienned
- 1 cup Yellow Pepper, Julienned
- 1 cup Cucumber, Julienned
- 1 cup Carrot, Julienned
- Combine the almond butter, water, soy sauce, olive oil, lime juice, agave syrup, ginger, sesame oil, and salt in the bottom of a large bowl and whisk until thick and emulsified. Add the zucchini, yellow pepper, cucumber and cilantro. Toss until evenly coated. Best served the same day it is made.
