Party Pineapple Pork
- 4 eggs
- 1 1/2 c. water
- 3 c. flour
- salt
- 3 to 4 lb. rolled pork roast, cubed
- 1 green pepper, cut in strips
- 1 large jar maraschinos
- 3 c. water
- 1/2 lb. brown sugar
- 1/2 c. vinegar
- 1/8 c. soy sauce
- 1 can pineapple chunks
- Mix batter of first 4 ingredients.
- Coat meat cubes in batter and deep fry until crisp.
- Place in 9 x 13-inch pan and set aside. In a large pan, pour juice from pineapple, cherries, water, sugar, vinegar and soy sauce.
- Bring to boil and boil for 2 minutes.
- Add pineapple, cherries and green pepper.
- Boil 1 minute more, add thickening of cornstarch and water.
- Pour mixture over pork.
- Bake, covered, about 1 hour at 350u0b0.
- Serve with fried rice and egg foo yong.
