Shana’S Apple Bread
- 1-1/3 cup All-purpose, Unbleached Flour
- 3/4 teaspoons Salt
- 1/2 teaspoons Baking Soda
- 1/4 teaspoons Baking Powder
- 1 teaspoon Apple Pie Spice OR Cinnamon
- 5-1/3 Tablespoons Unsalted Butter, Softened
- 2/3 cups Sugar
- 2 whole Large Eggs, Room Temperature, Lightly Beaten
- 2 cups Peeled, Chopped Apples
- 1/2 cups Chopped Or Diced Walnuts (optional)
- Preheat oven to 350u0b0 F.
- Whisk together the dry ingredients thoroughly.
- In a large bowl, beat the butter and sugar at high speed until lightened in color and texture, about 2 to 3 minutes. Beat in the flour mixture until blended and the consistency of brown sugar. Gradually beat in the eggs. Fold in the apples until just combined, along with the nuts, if desired.
- Scrape the batter into a greased 8-1/2 x 4-1/2 inch (6 cup) loaf pan. Bake at 350u0b0 for about 50 to 60 minutes, or until a toothpick comes out clean. Let cool in the pan on a rack for 5 to 10 minutes before unmolding to cool completely on the rack.
