Chickpea Salad
- FOR THE SALAD:
- 1 can (15 Oz. Size) Chickpeas, Drained And Rinsed
- 1/4 cups Red Onion, Finely Chopped
- 1 pint Grape Tomatoes, Halved
- 2 whole Persian Cucumbers, Chopped
- 1 whole Yellow Pepper, Stem And Seeds Removed Then Chopped Small
- 1/4 cups Cilantro, Chopped
- FOR THE DRESSING:
- 1/4 cups Olive Oil
- 1/4 cups Fresh Squeezed Lemon Juice
- 1 teaspoon Coriander
- 1/2 teaspoons Cumin
- 1/4 teaspoons Cayenne Pepper
- 1/2 teaspoons Salt
- 1/8 teaspoons Fresh Ground Pepper
- 1 clove Garlic, Crushed
- 1. Mix the dressing ingredients in a small bowl. Set aside.
- 2. Place chickpeas in a medium bowl. Add the rest of the salad ingredients, and mix together.
- 3. Pour the dressing over the chickpea and veggie mixture.
- 4. Chill or serve at room temperature.
