Orzo Salad
- 1-1/2 cup Orzo Pasta, Uncooked
- 1 pint Grape Tomatoes, Halved
- 1/4 cups Black Olives, Finely Chopped
- 1/4 cups Red Onion, Finely Chopped
- 3/4 cups Feta Cheese, Crumbled
- FOR THE DRESSING:
- 1/4 cups Extra Virgin Olive Oil
- 2 Tablespoons Fresh Lemon Juice
- 2 Tablespoons Red Wine Vinegar
- 1/2 teaspoons Dried Oregano
- 1/2 teaspoons Salt
- 1/8 teaspoons Fresh Ground Pepper
- 1/2 teaspoons Sugar
- 1 clove Garlic, Crushed
- 1. Cook pasta according to package directions. Drain and transfer to a medium bowl. Set aside to cool.
- 2. Whisk dressing ingredients together in a small bowl. Pour over the cooled pasta and stir to combine.
- 3. Add the tomatoes, olives, red onion, and feta. Stir well to combine.
