Banana Walnut Crumb Muffin Tops
- FOR THE MUFFIN TOPS:
- 1-1/2 cup All-purpose Flour
- 1 teaspoon Baking Soda
- 1 teaspoon Baking Powder
- 1/2 teaspoons Sea Salt
- 3 Very Ripe Bananas, Mashed
- 3/4 cups Sugar
- 1 Egg
- 1 Tablespoon Vanilla Extract
- 1/3 cups Butter, Melted
- 1 cup Walnuts, Chopped
- FOR THE TOPPING:
- 1/3 cups Brown Sugar
- 2 Tablespoons All-purpose Flour
- 1/8 teaspoons Cinnamon
- 1 Tablespoon Butter, Cold
- Preheat oven to 375u0b0F. Lightly grease a muffin top pan
- In a large mixing bowl, combine flour, baking soda, baking powder and salt.
- In another large mixing bowl, combine bananas, sugar, egg, vanilla and melted butter. Mix in chopped walnuts.
- Slowly combine the flour mixture into the banana mixture. Don't over-mix! Spoon batter into a greased muffin top pan.
- For the topping, in a small bowl, combine brown sugar, flour and cinnamon. Cut in cold butter until mixture has a coarse crumble appearance. Sprinkle topping over muffin tops.
- Bake in a preheated oven for 18-20 minutes or until a toothpick inserted into the center of the muffin tops comes out clean.
