Minted Halloumi Salad
- FOR THE SALAD:
- 4 cups Mixed Greens
- 12 whole Cherry Tomatoes, Halved

- FOR THE VINAIGRETTE:
- 4 Tablespoons Extra Virgin Olive Oil
- 2 Tablespoons Freshly Squeezed Lemon Juice
- 1 Tablespoon Honey
- 1/4 cups Fresh Mint, Chopped
- 1 pinch Kosher Salt
- 1 pinch Freshly Cracked Black Pepper
- 1/2 pounds, 7/8 ounces, weight Halloumi Cheese, Thickly Sliced
- Pita Bread, Optional, For Serving
- 1. Combine oil, lemon juice, honey, and mint in a jar. Shake well.
- 2. Taste and season with salt and pepper.
- 3. In a dry pan, cook sliced halloumi until well browned on both sides (about 2 minutes per side).
- 4. Arrange cheese on greens and tomatoes, and top with dressing.
- 5. Serve with toasted pita triangles.
