Homemade Date Bars
- 1 cup Fresh Dates, Chopped
- 1/2 cups Water
- 1/4 cups Sugar
- 1-1/2 cup Oats, Quick Cooking, Organic
- 1 cup Almond Flour
- 1/2 cups Brown Sugar, Packed
- 1/2 teaspoons Baking Soda
- 1/4 pinches Salt
- 1/3 cups Butter, Melted
- 1 whole Egg White Only
- Preheat oven to 350 F.
- In a small saucepan over medium heat, combine dates, water and sugar. Cook and stir until mixture comes to a slow boil, then reduce heat and stir constantly until mixture thickens. Remove from heat and let the mixture cool.
- In a large bowl, combine oats, flour, brown sugar, baking soda and salt. Stir in melted butter and egg white until blended. Pat 1/2 of the oat mixture into an 8x8 baking dish that you've coated with cooking spray. I use an olive oil cooking spray. Carefully spread the date mixture over the top and then cover with the remaining oat mixture.
- Bake at 350 F for 20-25 minutes or until lightly browned. Remove dish from oven and set it on a rack. Cool completely before cutting. So yummy! Enjoy!
