Pepper Steak(Makes 6 To 8 Servings)
- 1 to 2 tsp. minced garlic
- 2 Tbsp. butter or margarine
- 2 medium onions, cut into thin wedges
- 2 small green sweet peppers, sliced
- 1 1/2 lb. beef round steak, thinly sliced
- 1 1/2 c. beef broth
- 2 Tbsp. soy sauce
- 1/4 c. water
- 2 Tbsp. cornstarch
- 1 Tbsp. paprika
- 3 medium tomatoes, cut into wedges (about 2 c.)
- 1 c. snow pea pods
- hot cooked rice, spaetzle noodles or other pasta
- In a large skillet or wok, stir-fry the garlic in 1 tablespoon of the butter or margarine for 1 minute.
- Add the onions and green sweet peppers; stir-fry for 4 to 5 minutes or until the vegetables are tender.
- Transfer the vegetables with a slotted spoon to a bowl.
