Banana Split Cake
- 2 c. graham cracker crumbs
- 3 sticks butter or margarine
- 2 c. confectioners sugar
- pinch of salt
- 1 egg
- 1 large can pineapple tidbits, drained thoroughly
- 3 large bananas
- 1 large (13 oz.) Cool Whip
- maraschino cherries
- 1/2 c. chopped pecans
- Fruit Fresh
- chocolate sauce (Hershey's)
- Mix cracker crumbs and 1 stick butter.
- Spread and press into a 9 x 13-inch pan.
- Chill until ready to use.
- Melt 2 sticks butter.
- Add confectioners sugar, salt and egg.
- Beat 15 to 20 minutes, scraping sides.
- Do not underbeat.
- Spread over chilled crumbs.
- Slice bananas and mix with Fruit Fresh or lemon juice to prevent browning.
- Bananas should be coated.
- Layer sliced bananas over sugar mixture.
- Sprinkle pineapple tidbits over bananas. Spread with Cool Whip.
- Sprinkle with pecans.
- Place a cherry at center of each square piece to be sliced.
- Drizzle with chocolate sauce or serve separately.
