Margarita Jelly

  1. Measure water, lime juice, tequila and liqueur into a 6 or 8-quart saucepan.
  2. Stir in food coloring.
  3. Measure sugar into a separate bowl.
  4. Mix sugar thoroughly into juice mixture.
  5. Add margarine.
  6. Bring to a full, rolling boil over high heat, stirring constantly.
  7. Quickly stir in pectin.
  8. Return to full rolling boil exactly 1 minute, stirring constantly.
  9. Remove from heat; skin off any foam with metal spoon.
  10. Ladle quickly into clean, hot jars filling to within 1/8-inch of top.
  11. Wipe jar rims and threads. Cover with lids.
  12. Screw bands tightly.
  13. Invert jars 5 minutes, then turn upright.
  14. Check seals after jars are cooled.
  15. Makes about 5 (1 cup) jars.
