Chicken With Cucumbers And Dill
- 4 skinless, boneless chicken breasts
- 1 tsp. salt
- 3/4 tsp. pepper
- 4 Tbsp. butter
- 2 cucumbers, peeled, seeded and cut into 1/4-inch slices
- 1/4 tsp. dill weed
- 1/4 c. lemon juice
- lemon slices (for garnish)
- Sprinkle chicken breasts with 1/2 teaspoon salt and 1/2 teaspoon pepper.
- Melt 2 tablespoons butter in skillet and add chicken.
- Cook about 8 minutes or until chicken is brown on both sides.
- Remove from heat and keep warm.
- Melt remaining 2 tablespoons butter in same skillet.
- Add cukes; stir to coat. Sprinkle remaining salt and pepper over cukes; cook 2 minutes. Stir in dill weed.
- Push cucumbers to side of skillet.
- Return chicken and any collected juice to skillet.
- Cook 2 minutes or until chicken is tender.
- Place chicken on serving platter. Arrange cukes around chicken.
- Add lemon juice to juice in skillet and pour over chicken.
- Garnish with lemon slices.
